PITINA THAT COMES FROM THE PAST.

With the first arrival of the cold and snow in Val Silisia (City of Tramonti di Sopra) the goat is slaughtered to produce Pitine (the most 'lucky ones were able to break down the suede). The Pitine produced were placed on the wooden planks and made to smoke. The environment in which smoking was the same people lived, ate, the fire was lit on "larin" so 'for smoking the Pitine and warmed the room. The desire to try this product so 'fragrant and tasty, it was that was used in cooking almost immediately and normally Pitine were cooked in broth polenta. That was the fact that Pitine were few and the winter was long, so a Pitina had enough for dinner for the whole family.
